if you see the boss soul prompt instead of entering the menu, you pressed the use and menu buttons too late. If you see the messages menu coming out of the item menu, you pressed use item too early. once you're in the menu you can take as much time as you want to use whatever item you please - use the orange soapstone, it can be used everywhere and doesn't get consumed - and when you use it it'll be set as the active item for consumption purposes, while putting you back at the yes/no prompt the boss soul has been waiting in since you got out of the roll. Select the boss/firekeeper soul, do a roll, and as you get back on your feet, hit the use item and menu button in succession. Rolling is more reliable, works for everyone, and the timing isn't tight at all (even with fast roll). Works with firekeepers soul for humanity as well. You retain the soul consumable but you also gain that many souls. This should trigger a dialog box which wants a Confirmation of whether you wish to use the soul or not.
